Pici are thick strands of Tuscan pasta that go well with any hearty sauce. The slightly rough texture means a Bolognese or duck or rabbit ragu will cling to the surface. Very difficult to find in the United States, a bowl of Pici pasta will transform you to Tuscany. This thick pasta takes 15 to 18 minutes to cook al dente.
