Vantia Sicilian Caponata

Classic Sicilian-style eggplant appetizer is made with eggplant, celery, onions, capers, herbs, and seasonings. This caponata can be used as an appetizer on an antipasto platter, or as a topping for bruschetta or crostini. It’s also good on top of polenta for a hearty side or vegetarian dish.
